Cooking Tip – British Ox Liver
Why not make your own ox liver pate
- 9 oz Ox Liver
- 1/2 an onion
- 1/4 cup of dried cranberries
- 2 tbls of port
- 1/2 tsp of whole grain mustard
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper powder
This is a VERY quick recipe it takes all of around 5 minutes to make if that, the only lengthy part is the chilling. This is a hearty coarse páté with a fruity factor and a good kick to finish.
Chop up the liver into 1 inch pieces and dice the onion. Add the onion and liver to a hot frying pan along with the mustard, thyme, cayenne and 1 tbls of port. Mix the ingredients together and fry for around 2 minutes.
Next remove from the heat and put into a food processor (or a bowl and use a hand blnder) with the remaining 1 tbls of port. Blend until the consistency is that which is a little more coarse than you desire it to be. Finally add the cranberries and pulse a few times, then spoon the mixture into ramekins leave for a few minutes to cool and then leave in the fridge to set.
